grep without pattern
Just filter your output with:
grep -v "excluded_pattern"
Example to get all not txt files in current directory.
ls | grep -v .txt

grep pattern options
-F, --fixed-strings # list of fixed strings
-G, --basic-regexp # basic regular expression (default)
-E, --extended-regexp # extended regular expression
-P, --perl-regexp # perl compatible regular expression
